It’s seven simple ingredients, one slow cooker, and almost no effort. Dump it in, walk away, and come back to a pot of cozy, flavorful soup everyone will eat.

Easy Slow Cooker Mexican Chicken Soup
Ingredients
- 1 can corn, drained
- 1 can black beans, drained and rinsed
- 1 can diced tomatoes (undrained)
- 2 cups cooked white rice
- 1 to 1½ lbs cooked shredded chicken
- 1 packet taco seasoning
- 1 carton chicken stock
- To serve: sour cream, shredded cheese, and cornbread
Instructions
- Add the corn, black beans, diced tomatoes, rice, shredded chicken, and taco seasoning to your slow cooker.
- Pour in the chicken stock and stir well.
- Cover and cook on low for 3 to 4 hours or high for 1 to 2 hours.
- Ladle into bowls and top with sour cream and shredded cheese. Serve with warm cornbread.
4 Tips For Making This Yummy Soup Even Better
- Use what you’ve got. Leftover veggies, a can of green chiles, a handful of spinach, or a diced bell pepper all work great with this recipe.
- Rotisserie chicken is your friend. It’s the easiest way to get your shredded chicken.
- Want it thicker? Use less stock. Want more of a broth? Add a splash of water.
- Let everyone build their own bowl. Set out toppings and let the family go to town.
